Emily's Taco Potatoes

Emily loves a good starch after an intense workout session. Her pick? Potatoes - a good source of Vitamin B6 and Vitamin C which help with SO many body functions. Throw this three-ingredient side dish together and chow down with some grilled chicken and broccoli for a complete meal.

IMG_7431

Ingredients:

*Fingerling Potatoes
*Packet of Taco Seasoning
*Olive Oil

Directions:
Boil potatoes for approx 20 minutes (depends on how many potatoes you use)
Drain all the water
Using a fork or spoon, "crush" each potato- essentially flattening/splitting open the potato on a cookie sheet
Drizzle potatoes with olive oil and top with the packet of taco seasoning (optional: add another drizzle of olive oil on top to make it crispy)
Stick in a pre-heated oven (400 degrees) for 20 minutes (or until desired crispiness)
Let cool and enjoy!

Optional: hot sauce aioli dressing. SUPER EASY
Mix together veganaise mayo and hot sauce. Pour over hot potatoes before serving. SO GOOD.

Monday Motivator: Meet Britney

Today's Monday Motivator was admittedly not sold on group fitness classes until her good friend (and previous MM herself) Lauren convinced her to try out a class at Rev. That was only January, but since then, we've seen Britney pretty much every day and we ain't mad about it! She has a great attitude in and outside of the studio. Check her out on Instagram and you'll immediately be inspired to explore everything Buffalo has to offer: from museums, to the newest ice cream shops, to the trendiest cocktail bars and most importantly, any chance to volunteer and share those positive vibes out to the rest of the world..she doesn't miss a thing.

1. Give us a quick background on yourself.

Born and raised in Buffalo (and proud of it)! I’m currently living downtown, but grew up in Angola as a beach bum. Around the same time that I made the career jump from advertising to tech start-up, I decided I wanted to change up my fitness routine as well.

I’ve always been more of a runner and one for solo workouts, so I wasn’t sure group classes or spinning were for me. I’ll admit, I had to be coerced into trying Rev… but it was really a one and done experience! Now I’m hooked. :)

2. Describe your best workout ever in just three words.

“What was that?!”

3. What song(s) are you obsessed with right now?

“Rain Come Down” - Vince Staples

“Cold Little Heart (Radio Edit)” - Michael Kiwanuka

“Radio” - Sylan Esso

4. Any healthy habits to start/end your day?

Full disclosure: I am not a morning person, at all. So the 5:45 Rev classes really help me wake up and get going! After that, I usually need a big glass of water and large cup of coffee.

5. Any indulgences you just can't live without?

Pizza, pizza, and pizza.

6. Favorite workout on the bike - hills, sprints, isolations or tap backs?

HILLS!

7. Buffalo food truck you can't live without?

I’ll say Amy’s Truck when I’m looking to go meatless (Veggie Wet Shoes, FTW!) and Lloyd when I’m not.

Monday Motivators: Kate & Kathleen of Love In Motion Yoga

Hey Monday! We're comin' at ya stretchy and strong this week with our favorite yoga duo: Kath and Kate from Love in Motion Yoga! These crazy-silly, super-dedicated and all-about-the-balance besties are serious movement junkies. And two of the most generous peeps you'll meet in the B-lo. Every Friday 5:30pm class at their studio is donation based - how awesome is that? Get to know these rad chicas on the blog below - and then get to their studio to experience their practice and personalities for yourself!

FullSizeRender.jpg

1. Give us a quick background on yourself.
Kate: A movement junkie, cardio queen who loves to run, spin and sweat it out any way she can. Yoga is the thing that keeps me grounded and balanced through all the insanity that life brings, in and out of the gym.
Kath: I’m an investigator of all things related to movement. The nittier and grittier the details, the BETTER! I love anatomy and biomechanics and anything that makes most folks fall asleep. What brings me back to any and all workouts is the MUSIC! I love a good ol’, sweaty, dramatic cathartic experience on a bike, mat or anywhere else.

2. Describe your best workout ever in just three words.
Kate: Intense, sweaty, bliss.
Kath: Cathartic, creative, intelligent.

3. What song(s) are you obsessed with right now?
Kate: River by Leon Bridges.
Kath: Green Light by. (I also love River haha.)

4. Any healthy habits to start/end your day?
Kate: Coffee to start and wine to end ;) Haha, but if we need to be actually healthy about it, I love a little lavender oil on my wrists and temples before bed. Makes for some fabulous sleeping.
Kath: Meditation in the morning and reading before bed. Coffee and wine  fit quite nicely into the equation as well.

5. How do you help keep each other motivated to work out?
Kate: The bigger thing that we motivate each other with is reminding one another how important self-care is. We're both really great at grinding out a tough workout and always wanting bigger and better and MORE, so the best thing we do for one another is remind the other person to really listen to what our bodies need, and give each other permission to take a day and freaking CHILL.
Kath: What she said with the addition of me constantly reminding her that NO is a part of self care. She reminds me (the homebody) that being social can actually be therapy.

6. Favorite workout on the bike - hills, sprints, isolations or tap backs?
Kate: There's nothing like a muddy, gritty climb to an epic song to close your eyes to, dig in and work that shit OUT.
Kath: I Love me some jumps — 2 count, 2nd to 3rd. I also LOVE LOVE LOVE LOVE LOVE LOVE when Coll plays Proud Mary. Did I mention how much I LOVE LOVE LOVE IT!?

7. Buffalo food truck you can't live without?
Kate: Ru's Pierogi, obvs.
Kath: Lloyd
