Lex's Zucchini Nachos

Umm, nachos? On the grill? Made with zucchini instead of tortilla chips? Yes, please! Loaded with all your favorite toppers - use the ones Lex has suggested below or swap in your own - its about to become your new summer go-to dish!

Ingredients:
1 tomato 
1/2 yellow pepper
1/2 avacado
1 banana pepper
1 cup lentils
2 zucchini
1/4 cup salsa
1/4 cup shredded cheese
1/4 cup plain Greek yogurt mixed with 2 tablespoons shirachi sauce

Directions:
*dice tomato, yellow pepper, avocado, banana pepper
*add lentils
*slice zucchini  into 1/4inch thick rounds.
*Spread in a single layer onto a sheet of greased Tinfoil-(spritz with a little olive oil)
*Grill 5 minutes on each side
*Top with the diced toppings 
*add some salsa
*sprinkle 1/4 cup shredded cheese 
*heat till melted
Drizzle yogurt/sirachi sauce over top
