Up your lunch game with Lauren's craveable combo of avocado, bacon and chicken salad. Cottage cheese makes a high-protein alternative to traditional mayo.
Lauren's BLT Chicken Salad Stuffed Avocados
12- slices of turkey bacon
2- cups shredded rotisserie chicken
2- Roma tomatoes
2- cups cottage cheese
1- finely chopped romaine
Bake turkey bacon with directions on package. When done, let it cool then cut into small pieces.
Cut avocados in half, discard pits, set aside.
Dice tomatoes into small chunks (discard or eat the seeds). Chop up romaine into small pieces.
In large bowl blend in tomatoes, romaine, cottage cheese, shredded chicken, and bacon.
Put 1/6 of salad mixture on avocado halves.
There will be a good heap on the avocado but the pit doesn't create a big divot.
Salt and pepper to taste.
